Chicken Noodle Soup I


  • 2 large carrots sliced
  • 1 small onion diced
  • 2 stalks celery sliced
  • 2 tbs butter
  • 2 quarts chicken broth
  • 2 chicken breast halves cubed
  • 4 oz pasta noodles
  • pinch salt and pepper

Saute chicken and onions in two knobs of butter just until onions are turning soft. Add vegetables and simmer for a half hour or so. Add the noodles fifteen minutes before you want to eat. Throw a baguette in the oven for a fine repast.
