Chicken Pad Thai

- 1 lb chicken breast
- 1 onion
- 1 tsp minced garlic
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 2 tsp chili sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar to balance sugar
- 4 oz rice noodles
- 2 eggs
- 1/2 cup peanuts
- 1 small bunch cilantro
- 1 lime
Instructions
- Slice carrots and onions (large julian)
- Cut up chicken into small pieces
- Cook noodles to al dente
- Saute vegetables, set aside
- Saute chicken until half done on medium
- Add garlic on medium low
Add in this order:
- Fish sauce
- Soy sauce
- 2 Beaten eggs
- Chili sauce
- Brown sugar
- Rice vinegar
- Noodles
